Meal-prep for the serial snackers. These Greek Yoghurt Bakes and Mini Yoghurt Pizzas are packed with protein, super simple, and perfect for meal prep.

Mini Greek Yoghurt Pizzas (makes 6)

  • 200g Self-Raising Flour
  • 200g Greek Yoghurt
  • 30g Tomato Paste
  • 90g Mozzarella
  • 6 Cherry Tomatoes

Method:

  1. Preheat oven to 200°C (180°C fan) and line a baking tray.
  2. Mix flour and yoghurt to form a soft dough.
  3. Divide into 6 circles (~10cm) and place on tray.
  4. Spread tomato paste on each, top with mozzarella and halved cherry tomatoes.
  5. Bake 12–15 mins until cooked through and cheese is melted.

Greek Yoghurt Bake

  • 500g Greek Yoghurt
  • 3 Eggs
  • 40g smul Vanilla Protein Powder
  • 1 tbsp Corn Flour
  • 60g Honey or Maple Syrup
  • 125g Blueberries
  • Zest of 1 Lemon

Method:

  1. Preheat oven to 180°C (160°C fan) and grease a baking dish.
  2. Whisk yoghurt, eggs, protein powder, corn flour, and honey until smooth.
  3. Fold in blueberries and lemon zest.
  4. Pour into dish, smooth top, bake 30–35 mins until set and lightly golden.
  5. Cool slightly, slice, and enjoy warm or chilled.
