Mini Greek Yoghurt Pizzas (makes 6)
- 200g Self-Raising Flour
- 200g Greek Yoghurt
- 30g Tomato Paste
- 90g Mozzarella
- 6 Cherry Tomatoes
Method:
- Preheat oven to 200°C (180°C fan) and line a baking tray.
- Mix flour and yoghurt to form a soft dough.
- Divide into 6 circles (~10cm) and place on tray.
- Spread tomato paste on each, top with mozzarella and halved cherry tomatoes.
- Bake 12–15 mins until cooked through and cheese is melted.
Greek Yoghurt Bake
- 500g Greek Yoghurt
- 3 Eggs
- 40g smul Vanilla Protein Powder
- 1 tbsp Corn Flour
- 60g Honey or Maple Syrup
- 125g Blueberries
- Zest of 1 Lemon
Method:
- Preheat oven to 180°C (160°C fan) and grease a baking dish.
- Whisk yoghurt, eggs, protein powder, corn flour, and honey until smooth.
- Fold in blueberries and lemon zest.
- Pour into dish, smooth top, bake 30–35 mins until set and lightly golden.
- Cool slightly, slice, and enjoy warm or chilled.
