These Protein Cookie Dough Cups are the perfect no-bake sweet treat. Quick to make, packed with plant-based protein and naturally sweetened. Made with chickpeas, peanut butter and our vanilla protein powder, they’re topped with dark chocolate and a crunchy sprinkle of our chocolate chip sea salted granola.
High in fiber, deliciously fudgy and ideal for meal prep or a post-workout snack!
Ingredients:
- 240 g Chickpeas (1 tin drained and rinsed)
- 80 g Peanut butter (or any nut or seed butter)
- 80 g Liquid sweetener (honey, maple syrup, agave etc.)
- 60g smul Vanilla Protein Powder
- 120 g Dark Chocolate
- 30g smul Choc Chip Sea Salt Granola
Method:
- Add the drained chickpeas, nut butter, liquid sweetener, and protein powder to a food processor or high-powered blender. Blend until smooth.
- Divide the mixture into 12 equal portions and press each one into a silicone muffin tray.
- Melt the dark chocolate in the microwave in 20-second increments (stirring in between) or use a double boiler.
- Spoon the melted chocolate over the cookie dough bases.
- Sprinkle a little granola on top of each one.
- Freeze until firm, then pop the cups out of the tray and store in the fridge.
